Kimcheese Noodles
When it came to describing these noodles, words like noble, stately, magnificent, splendid, sublime, dignified, glorious, monumental, imperial, and resplendent came to mind. But even those couldn’t do this dish justice. Instead, we’ve found the perfect piece of music to truly complement its grandeur.

Prep the veg | Roughly chop the spring onion | Peel and slice the garlic | Slice lime into wedges

Cook the noodles | Bring a pan of water to the boil and drop in the noodles | Cook according to packet instructions, then drain reserving 2 ladles of the cooking water

Cook the ramen | Warm a large frying pan over a medium heat with the butter | Add the spring onions and garlic frying for 2 minutes until fragrant | Stir through the kimchi, gochujang and cheese | Pour in the noodle cooking water and soy sauce, stirring to combine as the cheese melts down and forms a creamy sauce | Sprinkle in the nutritional yeast and add the noodles, stirring to coat in the sauce

Serve | Divide the noodles between bowls and sprinkle over sesame seeds, crispy shallots and gochugaru | Serve with lime wedges
