Green Cheese Stuffed Courgette One Tray

    Preheat the oven to 190C degrees and grab a large baking tray.

    Cook courgette skins for 20mins seasoning with 2 tbsp olive oil, salt and pepper!

    Set a large frying pan to medium to high heat + add 2 tbsp olive oil followed by the shallot. Fry for 2 mins + add in the garlic, herb stalks for 2 mins.

    Stir in frozen peas + stock for 1 min. Pour this into a blender with basil, parsley leaves, lemon juice + a pinch of salt + pepper. Blend until smooth, about 30 secs!

    Stir in the crème fraîche. Check the seasoning + then pour into the baking tray.

    Using the same frying pan, add 1 tbsp olive oil + set to medium heat. Roughly chop up courgette filling + add to the pan. Fry 3 mins + pour in the chickpeas + season to taste!

    Spoon this into the courgette skins + carefully place into the baking tray. Scatter the yellow courgette circles.

    Roast for 15 mins + then grate over the cheese, a small splash olive oil + place under the grill (220C) for 5-6mins until golden + bubbling.

    Serve with a crunchy zingy salad.
