Steak and the ultimate mushroom sauce!

I went full old school after finding some mushies on my trip away with @alexxandra.allen. If you need a cuddle from a plate of food, save this one for next time.

    Sauté the mushies over a high heat in 25g of the butter and a little olive oil. Once they’re cooked through remove from the pan and turn the heat down to medium.

    Add in the rest of the butter and some more olive oil and sweat down the eschalots and rosemary sprigs. Once they’ve softened, add in the anchovies & garlic and sweat down for another couple of minutes.

    Add the mushies back in, season with a touch of salt and then add in the Madeira. Reduce the liquid by 3/4’s then add in the chicken stock and reduce again by 3/4’s. The sauce should have thickened nicely.

    Add the seeded mustard, chopped parsley, black pepper, sour cream and simmer for a couple of minutes.
