Southwest Potato Stacks

Thinly slice 3-4 large potatoes with a knife or mandolin.

Add potatoes to a large bowl with 1tbsp melted garlic butter and 2tbsp mild taco seasoning (mix well).

Spray a cupcake baking pan with olive oil spray.

Add 1tsp shredded pepper jack cheese in each cupcake slot.

Layer potato slices in each slot to the top.

Top potatoes with more cheese (fill it).

Bake uncovered at 400F for 35-45min, until crispy and golden.

Top with chipotle ranch and chives.
