    Butterfly shrimp and pat dry really well.

    Season shrimp with olive oil, salt, pepper, paprika, chipotle powder, garlic, and lemon zest; let marinate while making the chimichurri.

    To make the chimichurri, add all ingredients to a food processor and blend.

    Cook shrimp in a skillet over medium-high heat for about 1-2 minutes per side, depending on size.

    Once shrimp has cooked, drizzle chimichurri generously and enjoy!

We enjoyed with some baguette crostini as the sauce was perfect for dipping!
